Mathieu is quite polite to the point of coming off tense. It'd take him a while for him to drop honorifics or to ease up in a social gathering or just a small conversation. Concerning "academic topics" pertaining to his interests, he rarely breaks the monotony in his voice (unless he gets really really excited over some new plant or herb or ingredient or what have you) but when the topic shifts to a more personal level that's when he becomes awkward and will usually make up any excuse to get away.
